This recipe for Tomato & Watermelon Salad is the absolute essence of summer—light, refreshing and packed with nutrients. Tomatoes and watermelon are two excellent sources of lycopene, a powerful carotenoid that gives these foods their reddish hue and packs a serious antioxidant punch. Lycopene is a formidable weapon against free radical damage and may help combat a bevy of health issues, including cardiovascular disease, atherosclerosis and various forms of cancer. It has also been shown to promote healthy eyesight by reducing the risk of cataracts and age-related macular degeneration.
When it comes to beauty, Lycopene plays an essential role in fighting the signs of aging. It promotes and enhances cellular communication, growth and repair, which results in noticeably improved skin tone and texture. Lycopene also fights enzymes that break down and destroy collagen and helps defend your skin against dangerous UV rays, protecting it from sunburn and sun-related aging.
